Provisioning for Mexico: What foods will be available?

4 weeks 'til we shove off. How do we decide what foods to bring for our initial 4 weeks sailing Baja?

Since we're planning on cruising Mexico for 4-5 months, my emphasis in provisioning will be stocking up in the US on items not easily available in Mexico. Sugar, white flour, white rice, and fat-fat-fatty fat foods will be everywhere, I know.

Here is my list of these special food items so far:

Whole wheat flour
sesame seeds
poppy seeds
steel cut oats
roasted flax seeds
whole wheat spaghetti
green tea
Splenda and Stevia
chamomile tea
Diet Rock Star (for night watch)
peanut butter
sugar free jam
almond milk
Canola oil mayonnaise
Lite salt
nonfat milk mix
diet tea mix
canned white beans
canned lima beans
canned nonfat refried beans
brown rice
whole wheat lasagne
diet maple syrup
diet brown sugar
canned white chicken
low sugar Heinz ketchup
Pam
cranberry juice
Rye-Krisp
Tootsie Pops
Smartees

I have no idea how accurate this list is. There's only one way to find out. Vamanos! :-)
